(Makes 1 serving)

Ingredients:

8 oz. chicken breast
2 medium carrots, cut into 1/4-inch pieces
1 cup shitake mushrooms, stemmed and sliced into 1/2-inch pieces
1 shallot, chopped
1/2 cup low-sodium chicken broth
2 pinches salt
3 pinches black pepper
1 tbsp. fresh basil, chopped
Splash of Madeira wine

Directions:
Heat a sauté pan to medium. Add the oil and shallots. Heat slightly until the shallots are golden. Add the mushrooms and carrots. Mix. Add a splash of Madeira wine. Cook for a minute until the wine is cooked off, and add the chicken broth. Add the salt, pepper, and basil. Keep the heat on medium until the sauce has reduced by half. Meanwhile, place chicken breast on a hot grill. When the chicken breast is done, set it in a serving dish. Once the sauce has been reduced, pour it over the chicken breast. Serve.


Note: The sauce will be tastier at a thicker consistency. Try different consistencies to see where your preference lies. This sauce is also a fantastic atop filet mignon or any other steak.
