Vitamins and Minerals

Vitamins are micronutrients that are essential for physiological function and preferably consumed through food.

Exceptions are vitamin K, biotin, and vitamin D. Vitamins are classified into two types: fat-soluble and water-soluble.

Vitamins

  • Fat-Soluble     (Vitamins A,D,E,K)
    • Vitamin A- found in yellow foods such as carrots, pumpkin, and sweet potatoes.
    • Vitamin D – created from ultraviolet light from the sun
    • Vitamin E – antioxidant found in nuts, vegetable oils, green leafy vegetables, and cereals.
  • Water Soluble  (B-Complex and Vitamin C)
    • Antioxidants play a key role in preventing chronic disease.
    • B-Complex- found in whole grains, fortified cereals, fortified bread, and meat.
    • Vitamin C- found in broccoli, bell peppers, strawberries, oranges, lemon juice, papaya, kale, brussel sprouts, cantaloupe, and kiwifruit.

Minerals

Minerals are found in the body, as well as in food. Minerals are contained in all cells, especially those in bones, nails, and teeth. Minerals are important for regulating enzyme activity and maintaining pH balance to assist with strength and growth

  • Role of minerals:
    • Maintaining water and pH balance.
    • Regulates muscular contraction and nervous tissue impulses.
    • Mineralizes bones and teeth.
